Welcome to my hobby! Clover Creek Brewery is a quarter barrel brewery which is strictly a hobby – not a business. I brew less than 100 gallons a year and favor half a dozen different recipes. The brewery consists of three different systems.
- Wort Generation
- Fermentation
- Cold Storage
Wort is generated on a three keggle system consisting of a Hot Liquor Tank, Mash/Lauter Tun, and Boil Kettle. All three kettles are electrically heated and the Hot Liquor and Mash/Lauter Tanks are PID electronically temperature controlled. There are two magnetic drive sub-horsepower pumps to move wort around with and all fitting are stainless with cam-lock disconnects and silicone hoses. There is also an plate chiller for bringing down the wort temperature to pitching levels and an electrical enclosure containing all of the electrical gear and PID controllers.
My fermentation chamber is approximately four feet square and five feet tall and is heated by a small space heater or cooled by a 4,000 BTU A/C unit as necessary. Currently the temperature is controlled by an STC-1000 dual stage controller that has been re-flashed to be capable of step fermentation’s. Inside the temperature controlled and insulated box is 17 gallon conical induction tank used as a fermentor. Future upgrades are adding “Brewpi” controller so that it is web enabled. Part of this system is already in place – see the “Brewery Temperature” link.
Cold storage consists of an old and donated refrigerator with all the shelves removed and controlled by another ST1000 temperature controller. The refrigerator also has a C02 system for dispensing beer.
